Dinner Just Got Better: Carménère + Chimichurri Magic

Dinner the other night was one of those simple meals that turns out so good you feel like you should’ve invited friends over to share it. I made tenderloin steaks topped with chimichurri (that herby, garlicky, tangy goodness I could honestly eat on just about anything), and paired it with a bottle of Carménère from Ello Vineyard. And wow… it was chef’s kiss.

Why this combo works
Carménère is one of those reds that flies under the radar, but once you try it, you wonder why it isn’t everywhere. It’s juicy and bold, with just enough spice and earthiness to stand up to a lean steak like this tenderloin. It's also smooth, which is perfect when you’ve got something fresh and zippy like chimichurri in the mix. Every bite + sip just worked.
A little love for Ello Vineyard
The wine made it even better because it came from right here on Red Mountain. Ello is a small, boutique winery doing really beautiful estate-grown wines. You can taste the care they put into every bottle. I love supporting small local spots like this. Bonus - I know Joe and Michelle Zitello and they're just really good people! So when you can get great wine made by great people...well then...this Carménère deserves a spot on your next dinner table!
